Customer training
We offer all our customers locally-based training at our depot. All courses are free to Kingfisher Brixham customers and include:
- Upskilling on knowledge and understanding of fish
- A visit to Brixham Fish market
- Fish preparation and training day (Chef’s Fish Skill School)
Our most popular course – Chef’s Fish Skills School – is open to chefs of all levels, from Commis to Head Chef and also to front of house staff.

Staff training
All our fishmongers are fully trained in knife skills, filleting, skinning and boning of all types of fish and seafood.
MSC certification
We believe in the ethical sourcing and purchasing of fish supplies. We uphold the MSC Standard, Principles and Criteria for Sustainable Fisheries. We are fully committed to meeting the required criteria as set by the MSC. We know all our fish originates from well-managed and sustainable sources.
We’ll ensure that:
- Communicate any changes to the MSC standard to all depots
- Maintain the MSC logo licence agreement and all payments to MSC
- Maintain the MSC Certificate and relevant site register
- Review all depots’ MSC internal audits centrally and undertake an annual MSC Management Review
- Account for full traceability of all MSC fish
- Give our customers total confidence in the MSC Ecolabel
All our staff are fully trained and skilled in the roles they undertake.
Core training
We run an extensive programme in health and safety for all our staff. All our staff that work with food also undertake a certification in food hygiene.
