Local fishermen give us an amazing supply of the freshest fish available, from sea bass, Dover sole and skate through to grey mullet and cod. We source many other sustainable varieties when in season. During the summer we also supply lots of local lobsters, crabs and shellfish.
We work with day boat suppliers around the south coast who supply a fantastic selection of fish from our local waters such as red mullet, plaice, turbot and brill. We also have links to ports all around the UK enabling us to source day boat fish from other parts of the country where necessary.
We are first hand buyers at the main south west coastal fish auctions, including our local Brixham market along with Plymouth, Looe and Newlyn. This enables us to ensure full traceability from the vessel through to delivery into your kitchen. We also have links to other coastal auctions around the UK such as North Shields and Fleetwood
Farmed fish often features on core menu lines due to its consistent quality, availability and price. To enable us to guarantee responsible sourcing, we import directly from source, such as bass and bream from Turkey, Prawns from India, Salmon from Scotland and Norway.
We only work with small, specialist operators for live shellfish. In summer months we buy lobsters and crabs from local fishermen and during the winter we import directly from North America. We have live shellfish holding tanks enabling us to guarantee ultimate freshness.
